Did you know that the pleats or folds in a toque -- commonly referred to as a chef's hat -- actually have significance?  Do you know what the folds mean or represent?

I think it has something to do with the chef's level of experience?  I remember reading this in one of the biography/auto-biographies of a chef..... maybe the White House Chef?

The 100 pleats in the hat is meant to symbolize that the chef knew all 100 ways to prepare an  . . . egg!

Later, the number of pleats was used to represent the number of recipes a chef had mastered for any particular food, like eggs or chicken.  Having 100 pleats meant you were a master chef.
