Happy Monday!

It's rainy and cold here today - so my plans for dinner include something warm and comforting....  maybe chili or beef stew and cornbread.

  I'm making a list of some snacks that I would like to make for the Super Bowl on Sunday.  I'm not a big NFL fan but won't pass up a good opportunity for snacks/finger foods!  I want to make ham rolls (the little Hawaiian rolls with ham and cheese, mustardy sauce with poppy seeds) for sure - but not sure what else.  I did get spinach dip, salsa and bacon/cheddar/ranch dip from Sam's....  Any suggestions on easy, tasty appetizers?  What's something you will be serving for the Super Bowl?

What's cooking at your house tonight?

We don't watch the Super Bowl, but we do watch the Kitten Bowl and the Puppy Bowl!  When we need party snacks it's usually corn dog nuggets, fried mozzarella, cheese quesadillas, and/or baked potato skins. 

As for dinner tonight I believe we will be having a meatloaf (already in the freezer) along with mashed potatoes, green beans, and corn bread (also, already in the freezer). 
I don't know what my spirit animal is, but I'm pretty sure it has rabies.

We’re having left over chicken Parmesan tonight. I was going to try a new recipe for next Sunday - sheet pan chicken fajitas. But I am a huge fan of the NFL and won’t want to miss a second if the game (cheering for Andy Reid and the KC Chiefs) so I might go for something easier like pre-made chicken wings and potato skins. 

But I’ll be checking in on this thread to see what others suggest.

No Super Bowl here. But if I was doing any appetizers that day, I'd probably make a spinach and artichoke dip with pita chips.

Not sure what we will be doing for dinner tonight. We might run errands after work and if that is the case, we will stop and eat somewhere. Or I'll make hamburgers. Or put a lasagna in the oven. We do have leftovers from last night but I don't have any sides to go with it.

We call them Lil' Heart Attacks in our family... A little smokie, wrapped in bacon, coated with brown sugar and baked until the bacon is crisp.  Another favorite is layered dip - either taco or chili with tortilla/corn chips.  Not sure what my plan will be this year, if any.   

I am thinking I will make spaghetti and meatballs tonight since I am home.  Otherwise, whatever BF brings will work, lol.

we have some colder weather coming so im going to grill tonight while its still nice out.......burgers and brats

no superbowl here........so no nibbles

Everything you guys mentioned sounds delicious! DH does his "Iron Chef / Italian mama routine" on Sundays and cooks for the week. This week he made a tomato sauce for pasta, Asian veggies for long noodles for Chinese New Year (I know it was Saturday LOL but we play D&D on Saturdays so we'll celebrate late), and a jalapeno pork and beans for rice. I'll make my "famous" spinach balls sometime this week also. So I just need to pick one of these things each night and be the sous chef. Tonight will probably be the long noodles!

Oh and we do watch the Super Bowl every year and DH even took the next day off because he is SOOOO hooked on The Masked Singer, which premieres after the Super Bowl. So he wants to be able to enjoy staying up late, haha! Not sure what we'll do for food but we usually come up with some kind of fun theme. Sometimes based on who is in the game but sometimes not. I think he might be doing a baked potato with fixin's kind of thing, but that could change.

No Super Bowl watching here. So no help on the snacks.
And not sure what’s for dinner. Maybe sloppy joes. We have 2 birthday celebrations this week, though!

Been wanting biscuits so going to use a small ham steak to make country gravy and biscuits tonight. Some canned peach slices to make it healthy!! lol

And since it’s just me now, probably just get some guacamole and tortilla chips for snacking during game.

I'm not a football fan, but dh is.  He doesn't ask for any kind of special snack; he just eats what's around.  If I were going to make snacks, I would make spinach dip, chili cheese dip, maybe some mini meatballs with some kind of sauce, little smokies with bbq sauce.  Now I'm hungry for snacks.  For dinner tonight, we are having leftover broccoli/beef (used moose meat)
