Thanksgiving was my dad’s holiday (I was allowed to make T’day dinner ONCE), so Christmas was mine. Every year I asked my parents (mostly my dad) what they wanted for the main course. We’ve had lobster, salmon, Cornish hens, crown roast…this particular year, my dad begged me for prime rib. He had it once at a restaurant and really enjoyed it - and hadn’t had it since.
So, prime rib it was. (sadly, the boarder is covering the pic!). I also made soft butter rolls, potatoes supreme, mixed veggies, and a winter salad with lemon poppy dressing. Thinking back, I really need to make those rolls again - they were so soft and pillowy.
